Today’s spice is 「Asafetida」


It is not an exaggeration to say that this spice is quite local spice and it is not used at all in Japan. Yellow flowers are blooming in the plant of the family Seriaceae, but it is rhizomes to use as spices.

However, the fragrance of this spice is intense, it smells like adding sulfur and celery.
When licking with Asfoetida alone, its taste is garlic, salt, celery, hot, not so taste. In India it is called devil’s shit.

It is a very smelly spice, but it is often used in soup and curry to drink when indigestion such as Indian cuisine RASAM, it becomes fragrant good fragrance by passing through the fire.
