Today’s spice is 「Watercress」


Origin is Europe and Asia. It is a plant in which white flowers bloom, the part to use as spice is leaves and stems. Watercress has alias, creson, the Netherlands is said to be a lame. It was on Watercress on the reference book of Ayurveda that I had.
Because watercresses are high in autogenous power and fertility, just by keeping the branches of watercress in water, they will root (even I can be raised?)

Well, although it’s efficacy,

  • Taste: pungent
  • Function: Heating body
  • Working: diuretic,expectorant
  • VIPAKA (taste after digestion): pungent
  • VPK analysis: decrease Vata,Kapha

Ayurveda, spice is also useful as a medicine.

Watercress has a pungent taste, but its flavor is refreshing. How to use is good for garnishing with salads, soups and meat dishes. It is watercress which is not maindish,

However, it is the strongest vegetable

In 2014, in a research journal at the Center for Preventive Control of Disease (Chronic Disease) in America, Watercress has announced that the content of nutrients is higher than any vegetables. That nutrient is,

  • Potassium
  • Dietary fiber
  • protein
  • Calcium
  • Iron
  • Vitamin B1, B2, B3, B6, B12
  • Folic acid
  • Zinc
  • Vitamin A
  • Vitamin C
  • Vitamin E
  • Vitamin K

It seems that we score results by scoring the content of these nutrients, but Watercress is ranked number one with 100 points outstanding. For example, “spinach” which is said to be a good vegetable for the body in Japan, ranked fifth with 86.43 points. It seems to be said that cancer prevention is also here.
